I manually render beef suet sourced from a local butcher shop or meat market. The beef I select is high-quality, grass-fed, hormone-free, and chemical-free. To start the rendering process, I place the beef fat into my crockpot, add water and sea salt, and cook it on low for several hours. After the initial rendering is finished, I carefully strain the fat using a Brewer bag and a sieve. The tallow is then poured into a large bowl and placed in the refrigerator until it solidifies. I drain off the liquid that collects at the bottom of the bowl and repeat the process 2-3 times. Finally, I dry render the tallow in the crockpot on low, without adding anything—just the tallow cake. Once this is done, after a few hours, I strain it again and pour it into glass jars for storage. It requires a lot of effort, but the results are certainly rewarding!
